What Are Churros?

Churros are sticks of fried dough rolled in cinnamon sugar, popular in both Spain and Mexico. Spanish churros tend to be shorter and served “con chocolate” (with chocolate sauce), while Mexican churros are usually longer with more pronounced ridges.

Ingredients

    Combine water, vanilla, salt, and butter in a saucepan over medium-high heat and bring to a boil. Add the flour and 2 tablespoons of sugar all at once into the butter mixture and use a wooden spoon to stir vigorously. (Alternatively, transfer the dough to a stand mixer fitted with the paddle attachment and beat on medium speed.) Once combined, remove from heat. Wait 1 minute to cool, then add the egg and continue to stir vigorously until the dough pulls away from the pan.

    Let the dough cool to room temperature, then transfer to a piping bag fitted with a star-shape piping tip.

    Meanwhile, make the cinnamon sugar: In a shallow bowl, mix cinnamon and sugar until combined. Set aside.

    While the dough is still cooling, pour oil into a large saucepan to a depth of about 2 inches. Heat oil to around 350°F (a little higher or lower is fine but may change cook time.) Using a pastry bag with a star tip, pipe 6-inch-long churros directly into the hot oil, snipping with scissors. Fry churros until golden brown and crispy, about 2–3 minutes on each side. Repeat with remaining dough, frying in small batches so that the churros do not touch. Alternatively, pipe churros onto a parchment paper-lined baking sheet and freeze until solid, about 20–30 minutes, then lower frozen churros into the oil, allowing extra time for cooking.

    Transfer cooked churros to a paper-towel-lined baking sheet to let the oil to drain for about 1 minute.

    Roll still-hot churros in the cinnamon sugar and serve warm.
