What Are Cupcakes?

Cupcakes are small cakes that feature a topping of whipped icing sugar, a candy garnish, or another decorative element. Some cupcakes feature a sweet filling in the center of the cake, like jam, frosting, or compote. You can make these single-serving treats with standard cake batter—the only difference between the baked goods is their size. While a regular cake bakes in a large pan, cupcakes bake in small, individual cup-shaped wells in specialized pans. The name “cupcake” originated from the concept of baking miniature cakes in small cups.

How to Frost Cupcakes

Frosting cupcakes can be as easy or as complicated as you want it to be, but here is a general step-by-step guide to the process:

  1. 1. Cool the cupcakes. Before frosting the cupcakes, allow them to first cool to room temperature. Leave the cupcakes out on the counter or chill them in the refrigerator, completely covered, to cool them down quicker. Skipping this step will result in the buttercream melting and not holding its shape on top of the cupcake.
  2. 2. Make the frosting. While the cupcakes cook, prepare your frosting. American buttercream is one of the simplest you can choose, but cream cheese frosting and Swiss meringue buttercream are also popular options. Find a buttercream recipe that uses readily accessible ingredients, or use store-bought frosting.
  3. 3. Spread or pipe the frosting on the cupcakes. With a butter knife or offset spatula, spread a layer of frosting on each cupcake—all the way to the outside edge. This is a good method for beginners. Alternatively, you can pipe on the cupcake frosting. To do this, place a piping tip in the bottom of the piping bag, then fill the piping bag with buttercream frosting. Pipe in a continuous circle, starting in the center of the cupcake and working your way to the edge of the cupcake.
  4. 4. Decorate the cupcakes. Once the base layer of frosting is down, decorate the cupcakes with sprinkles, chocolate chips, candy toppers, or a different color of vanilla buttercream for accent piping.

A layer of buttercream frosting is a classic way to finish cupcakes, but you have other options, too. Here are four cupcake decorating ideas that go beyond a basic buttercream:

  1. 1. Fondant: A type of sugar paste, fondant can be any color you choose. Roll it out on a flat surface (dust your work area with powdered sugar first), then cut out shapes to place on top of the cupcakes. Layer cakes typically use a thin layer of buttercream to help the fondant adhere to the cake, but this is unnecessary for cupcakes.
  2. 2. Ganache: A mixture of hot, heavy cream and chopped chocolate, ganache has a silky, thick consistency. Add the ganache to a decorator bag and drizzle it over the cupcakes. Alternatively, hold the cupcakes upside down and dip them into the ganache to coat the entire top surface of the cupcake.
  3. 3. Ice cream: Instead of adding a dollop of frosting to a cupcake, add a scoop of ice cream. For example, use peanut butter ice cream on chocolate cupcakes for a peanut butter cup flavor. With vanilla cupcakes, your options are almost endless—use strawberry ice cream, coffee ice cream, or any other flavor you prefer.
  4. 4. Powdered sugar: Add powdered sugar in a fine-mesh strainer and dust the surface of the cupcake. For a more intricate design, cut shapes or words out of a piece of wax paper. Then place the paper on top of the cupcake and dust the powdered sugar above it. The powdered sugar will highlight the design while the rest of the surface will remain plain.

To produce bakery-worthy cupcakes, try these tips for finishing your baked goods:

  1. 1. Keep the frosting recipe simple. Cupcake decorating is as much about appearance as it is about taste, but a good buttercream recipe requires only a few ingredients. Butter, confectioners sugar, vanilla extract, and milk are staple ingredients for American buttercream, while meringue buttercreams contain egg whites, granulated sugar, butter, and vanilla extract. In a pinch, you can even use whipped cream as cupcake frosting.
  2. 2. Learn different piping techniques. Piping is one of many techniques for cake decorating and requires a piping bag outfitted with a special tip. The various decorating tips or frosting tips result in different designs, which affect the overall look of the cupcakes. If you plan on doing a lot of cupcake or cake decorating, it’s worth learning how to use each one. For example, use a large round tip for fluffy clouds, a star tip (open star or closed star tip) for rosettes and flowers, and a leaf tip to create landscapes and other special shapes.
  3. 3. Make frosting in different colors. You can use food coloring to make frosting in many unique colors. Consider using a color theme for seasons, holidays, or other special occasions or events. In addition to enabling you to customize cupcakes for specific events like birthdays, Mother’s Day, and Thanksgiving, different colors can add depth to the overall cupcake design.
  4. 4. Use a piping tip coupler. If you’re already skilled at various piping techniques or even if you’re a beginner, a piping tip coupler is a handy tool to include in your decorating kit. This item allows the cake decorator to exchange the decorating tip in the pastry bag for another while continuing to use the same bag of frosting. With a piping tip coupler, the tip is on the outside of the bag, rather than inside the bag.
