What Are Peppermint Patties?

Peppermint patties are chocolate-covered mint candies. Traditionally, the minty filling is made with fondant, a pliable sugar paste flavored with peppermint oil. There are a few different ways to approximate the creamy filling at home, such as with sweetened condensed milk, powdered sugar, corn syrup, egg whites, or vegetable shortening with vanilla extract and mint extract. Classic peppermint patties feature a dark chocolate coating, but you can also make the patties using milk chocolate.

Origins of Peppermint Patties

Candy recipes for homemade peppermint patties appeared in American magazines and cookbooks as early as 1878, and by 1921, peppermint candies were considered "old fashioned." In those days, mint patties were made with food coloring and did not always feature a chocolate shell. Peppermint patties were popularized in 1940 when York Cone Company began producing the York Peppermint Pattie.

Ingredients

    In the bowl of a stand mixer fitted with the paddle attachment, mix the sugar, evaporated milk, and peppermint oil on low speed until just incorporated.

    Increase to medium-high speed and mix until light and fluffy, scraping down the sides with a rubber spatula as needed.

    Transfer the mixture to a piece of parchment paper or wax paper.

    Fold the paper over the peppermint mixture to cover.

    Refrigerate until the mixture is stiff, about 30 minutes.

    Form peppermint paste into ½-ounce balls, then flatten into ¼-inch thick patties. You can use a round cookie cutter to shape the patties.

    Arrange the patties on a parchment-lined baking sheet and freeze for 30 minutes.

    Make a double boiler by filling a small saucepan with an inch of water and placing a heat-safe bowl on top.

    Bring to a simmer, then reduce heat to low.

    Melt the chocolate chips and coconut oil, stirring occasionally. (Alternatively, melt the chocolate and coconut oil in the microwave in 30-second increments.)

    Remove from the heat.

    Using a fork or skewer to hold the peppermint patties, dip the patties into the melted chocolate, letting the excess chocolate drip back into the bowl.

    Set patties on a parchment-lined baking sheet.

    Refrigerate until the chocolate coating has hardened, about 30 minutes.

    Store in an airtight container in the refrigerator.
