Grilled grouper is marinated grouper fish cooked on a grill. Grouper is a white fish with a mild flavor, similar to halibut or sea bass, with a light, sweet taste, and a large flake. To grill grouper, first marinate the fish in olive oil, lemon juice, spices, and seasonings. Popular seasonings for grouper include Cajun seasonings with an array of ground peppers—black, cayenne, and white—or Creole seasoning mixes, which often oregano, thyme, rosemary, and paprika.

- 1. Salsa: Top grilled grouper with fresh salsa made from tomatoes, pineapple, or mango to add some sweet heat.
- 2. Mediterranean chopped salad: Serve grouper with a chopped salad of tomatoes, cucumbers, bell peppers, olives, and fresh herbs like mint, cilantro, or parsley. Add some crumbled feta cheese or some shaved Parmesan cheese for added texture and flavor.

Preheat a charcoal or gas grill over medium-high heat. (Alternatively, preheat a grill pan over high heat.)

Pat the grouper dry with paper towels. Season with 1 teaspoon salt and ½ teaspoon black pepper.

In a medium bowl, whisk together olive oil, garlic, lemon zest, lemon juice, paprika, oregano, and red pepper flakes. Season with salt and pepper to taste.

Add the grouper to the marinade and toss to coat. Set the fish on a baking sheet in the refrigerator to marinate for up to 30 minutes.
