What Is Grilled Cauliflower?

Grilled cauliflower is a preparation of cauliflower that involves cooking this cruciferous vegetable on a hot grill until charred and crispy. The crown is susceptible to burning and charring quicker than the stalks, which require a longer cook time to reach tenderness. Concentrate your coals to one side of the grill to create a higher temperature zone where you can cook the stalks, leaving the crowns unscathed.

    Bring a large pot of salted water to a boil, and prepare a bowl of ice water.

    Lower the cauliflower into the boiling water and blanch until a paring knife can easily pierce the stalk, about 5 minutes.

    Using tongs, carefully remove the cauliflower head from the boiling water and transfer it to the ice water.

    Preheat a gas grill to medium-high heat or prepare a charcoal grill with a high-heat zone and a low-heat zone.

    In a small bowl, whisk together the olive oil, lemon juice, balsamic vinegar, sea salt, garlic powder, onion powder, paprika, cumin, and black pepper until well combined.
