What Is Grilled Cabbage?
Grilled cabbage is a dish that cooks on the grill instead of in the oven or on the stovetop. The grill imparts a smoky flavor, similar to roasted cabbage, and the signature char marks of grilled food. Cut a head of cabbage into wedges or thick slices so more surface area touches the grill grates and the food cooks faster. For smaller varieties of cabbage, like brussels sprouts, boil them first to soften them. Then season the small cabbage heads, skewer them, and grill them until the outer leaves are crispy.
3 Ways to Use Grilled Cabbage
Smoky and tender grilled cabbage is a versatile ingredient you can add to a wide variety of dishes, including soups, slaws, and salads. Here are just three suggestions for how to enjoy grilled cabbage:
- 1. Chop the cabbage for coleslaw. Grill cabbage in thick slices, then mix the cut cabbage with mayonnaise, apple cider vinegar, kosher salt, and black pepper for a grilled cabbage coleslaw. The grilling process adds a deeper flavor than that of raw cabbage. Use the coleslaw on fish tacos or pulled pork sandwiches with a barbecue sauce (or BBQ sauce).
- 2. Make a cabbage wedge salad: Instead of using iceberg lettuce for a wedge salad, use a wedge of grilled cabbage. Top the cabbage with classic wedge salad toppings, such as bacon, tomatoes, and a blue cheese dressing or ranch dressing. The char from the grill adds a soft, crunchy texture.
- 3. Prepare cabbage steaks. Season cabbage steaks with black peppercorns, salt, garlic powder, paprika, and extra-virgin olive oil. Then grill the cabbage to achieve a good char on the cut sides while retaining some of the crispy texture of raw cabbage. Top the grilled cabbage steaks with Parmesan cheese shavings, crumbled feta cheese, and a drizzle of balsamic vinegar for a vegetarian main dish.

Lightly grease the grill grates with olive oil or nonstick cooking spray.

Preheat the grill to medium-high heat.

On a sturdy cutting board, cut a head of cabbage into 4 wedges and remove the core.

Remove the loose outer leaves and discard or compost them.

In a small bowl, combine the olive oil, red pepper flakes, salt, pepper, and paprika to create a seasoning paste.

Cover all sides of the cabbage wedges with the seasoning rub. Brush on the barbecue sauce if you’re using one.

Grill the cabbage wedges for 5 minutes.

Rotate the wedges to an ungrilled side and cook for another 5 minutes.

Rotate the wedges again to an ungrilled side and cook for another 5 minutes.

Remove the cabbage wedges from the grill and serve them as is or reserve them to use in other recipes.

Store any leftover grilled cabbage wedges by wrapping them tightly in aluminum foil or placing them in a resealable plastic bag.
