What Is Grilled Avocado?
Grilled avocados are avocados that cook on the grill. The natural sugars in the avocado caramelize, and the avocados take on a smoky flavor. Ripe avocados are naturally soft but cooking them on the grill makes them creamier while grill marks add a slightly crispy texture. Avocados are a naturally gluten-free food.
4 Ways to Use Grilled Avocado
Here are four ways to use a smoky, creamy grilled avocado:
- 1. Add a chopped grilled avocado to a salad. Cut the grilled avocado into cubes and toss it with leafy greens, black beans, corn, queso fresco, and a simple vinaigrette of lemon juice and olive oil. Chop the avocado into tiny pieces and add vegan mayonnaise, salt, and pepper for a substitute for a traditional egg salad. Alternatively, add arugula and a lemon vinaigrette for an even simpler but still leafy avocado salad.
- 2. Mash grilled avocados for guacamole. Mash grilled avocado, cilantro, red onion, fresh lime juice, salt, and pepper in a mortar and pestle or traditional molcajete. Make the guacamole smooth or chunky and serve it with tortilla chips or on top of tacos with pickled jalapeños.
- 3. Purée grilled avocados into a dip. Add grilled avocados, sour cream, lime juice or lemon juice, cumin, salt, and pepper to a food processor. Drizzle water or olive oil through the food processor’s feed tube until the mixture is smooth. Spoon the purée into a bowl and top it with fresh pico de gallo and chopped cilantro. Use the purée as a dip for chips and raw vegetables, or spoon it onto Mexican dishes.
- 4. Spread a grilled avocado on toast. Lightly toast a slice of sourdough or other artisan bread, then spread mashed grilled avocado over it. Top your slice of avocado toast with feta cheese, red pepper flakes, halved cherry tomatoes, sea salt, a fried egg, and a drizzle of extra-virgin olive oil.

Preheat a gas grill to medium-high heat.

Cut the avocados in half and remove the seeds. Leave the skin on the avocado halves.

Brush the cut side with olive oil and sprinkle each half with salt and pepper.

Carefully place the avocado halves on the grill grates, cut side down.

Grill the cut avocado for 3 minutes. Rotate the avocado 45 degrees and grill it for another 3 minutes to create crisscross grill marks.

Remove the grilled avocado halves from the grill and serve them or scoop the fruit out of the skin immediately.

To store leftover avocados, sprinkle the avocados with lemon juice and place them in an airtight container in the refrigerator.
