What Is a Granola Cookie?

A granola cookie is a cookie made from flour, butter, sugar, and eggs with a baked granola blend, toasted rolled oats, nuts, seeds, and dried fruit. Granola cookies may also be made by simply incorporating elements of granola—rolled oats, chopped nuts, and dried fruit—into a standard cookie dough.

Serve granola cookies as a solo snack or alongside vanilla ice cream.

4 Tips for Making Granola Cookies

Like granola itself, granola cookies can be a blank slate for a variety of cookie expressions.

  1. 1. Homemade vs. store-bought granola. Bakers can make granola cookies with either homemade or store-bought granola. If making homemade granola, allow an extra 30–40 minutes of baking and cooling time before using it in the cookie dough.
  2. 2. Add mix-ins. Use the humble granola cookie to build the granola experience of your dreams: If the granola you have is relatively plain, add more chopped dried fruit, like apricots, golden raisins, or dried cranberries; sunflower seeds or flax seeds; or an extra handful of dried nuts, like pecans or cashews, to a store-bought blend.
  3. 3. Take cues from your granola blend. Adjust the recipe content to complement the granola you have on hand: If it’s on the sweet side, try dialing down the added sugar. Alternately, add chocolate chips or miniature chocolate candies to the mix to up the sweet factor.
  4. 4. Storage. To keep them soft, store granola cookies in an airtight container at room temperature for up to three days.

    Preheat the oven to 350°F. Line two baking sheets with parchment paper or silicone baking sheets.

    In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar together on medium speed until the mixture is light and fluffy, about 5 minutes.

    Add the eggs in one at a time, allowing each to combine thoroughly before adding the next one. Add the coconut oil and the vanilla extract, scraping down the sides as necessary.

    In a large bowl, whisk together the flours, baking soda, and salt, then add half to the butter and sugar. Mix at low speed until combined, then add the remaining flour mixture.

    Add the coconut, dates, or chocolate chips, and granola. Gently fold them in with a spatula.

    Use a cookie scoop or two spoons to place the dough balls on prepared baking sheets, a few inches apart. Bake the cookies until the edges have just started to brown and the tops are puffed.

    Remove the pan from the oven. Let the cookies cool slightly before transferring them to a wire rack to cool completely.
