What Is Goat Cheese Bruschetta?

Goat cheese bruschetta is a savory crostini appetizer topped with whipped goat cheese, tomatoes, and basil. Bruschetta is an Italian antipasto (appetizer) that was originally created to salvage stale bread and showcase the flavors of olive oil. In Italy, “bruschetta” refers to the grilled slice of bread rubbed with garlic and olive oil, not the topping itself. Tomato and basil are a common bruschetta topping, as well as beans and cured meats. Add to the classic by whipping goat cheese, cream cheese, and Parmesan together, then spreading it between the layers of bread and tomato and finishing with a drizzle of balsamic vinegar.

Ingredients

    Preheat the oven to 400 degrees Fahrenheit with a rack in the bottom position. Set bread slices on a baking sheet and drizzle with olive oil on both sides. Transfer the bread to the oven and toast until crispy and golden brown on the outside, but still slightly pliable, flipping halfway through, about 5–7 minutes total.

    Remove the bread from the oven and let it cool slightly, then rub the halved garlic clove over the surface of the toasted bread. Season with salt.

    In a medium-size mixing bowl, combine the tomatoes, ¾ of the minced garlic, thyme, and olive oil. Tear the basil leaves into small pieces and add. Season with salt and pepper and stir gently to incorporate. Taste, and adjust seasoning as needed. Set aside, and allow the tomato mixture to marinate at room temperature.

    In the bowl of a food processor, blend goat cheese, cream cheese, Parmesan, and the remaining minced garlic until fluffy and smooth. Season with salt and pepper.

    Spread the goat cheese mixture evenly over the crostini slices, then top it with the tomato basil mixture. Drizzle the balsamic vinegar over the top and finish with a few cracks of black pepper.
