    Add the flour, baking powder, xanthan gum, and salt to the wet ingredients and stir everything together until just combined. The dough should be slightly crumbly, but pliable in your hands.

    Transfer the dough to a lightly floured surface and divide it into two equal portions. Form the dough into balls.

    Wrap the two dough balls in plastic wrap and place them in the refrigerator. Refrigerate for a minimum of 2 hours or overnight.
