Named after the cobblestone-like pattern formed by the dollops of buttery biscuit crust layered atop this dish, cobbler starts with a sweet, macerated fruit base that is topped with semi-sweet dough and baked until golden brown.

In contrast to peach pie, which requires a more rigid baking process and practiced hand, and peach crisp, which is made with an oat streusel topping, this simple cobbler is the perfect easy, gluten-free dessert recipe for summertime and beyond. Follow these tips to make sure that your gluten-free peach cobbler turns out perfectly.

  1. 1. Use fresh fruit, when available. Fruit is the showcase of any cobbler, and the best cobblers use fresh, ripe fruit. Avoid using canned peaches, which will produce a soggy, overly sweet dessert. If fresh peaches are not available to you, you can swap in an equal portion of frozen peaches.
  2. 2. Experiment with additions. This versatile peach cobbler can be easily adapted to your flavor preferences. Add nuts like walnuts, pecans, or slivered almonds to your peach filling for a textural contrast, or add in spices or herbs. Warm, fall-friendly spices like allspice and nutmeg will work well in this cobbler, as well as flavorful herbs like rosemary and thyme.
  3. 3. Leave space between your crust. Space out your clumps of cobbler topping as you place the pieces over the peach filling. This will allow your fruit base to ventilate, helping prevent your cobbler topping from getting soggy.

    Preheat the oven to 380 degrees Fahrenheit.

    Combine the sliced peaches, sugars, cornstarch, lemon juice, and cinnamon in a medium bowl. Stir the ingredients to incorporate. This will be the peach filling for your cobbler.

    In a large mixing bowl, whisk together the gluten-free all-purpose flour, cornmeal, sugar, baking powder, and salt. Add the cubed butter to the flour mixture, working it in with your hands until it has reached the texture of coarse bread crumbs.

    In a small bowl or measuring cup, whisk together the egg, vanilla extract, and ½ cup of the buttermilk.
