For apples that already taste sweet (like Fuji, golden delicious, or Honeycrisp apples), use less sugar—as little as a quarter cup. For apples that taste very tart (like Granny Smith apples), use more sugar—as much as three-quarters of a cup.

Combine the apple slices, sugar, lemon juice, cinnamon, and cornstarch in a medium bowl. Stir the ingredients to incorporate. This will be the apple filling for your cobbler.

In a large bowl, whisk together the gluten-free flour, cornmeal, sugar, baking powder, and salt. Add the cubed butter to the flour mixture, working it in with your hands until it has reached the texture of coarse bread crumbs.
