The cool weather of autumn brings new ingredients for easy weeknight dinners and desserts. Some seasonal fruits and vegetables include:
- 1. Gourds: Gourds, also known as squash and pumpkins, are a type of hard-shell fruit grown on a vine. Fall gourds include pumpkin, butternut squash, acorn squash, and spaghetti squash. Use these vegetables to make soups and desserts, or roast them in the oven on a sheet pan.
- 2. Fruits: Fall is apple season, and you can use apples to make apple cider and apple pie. You can also use seasonal cranberries and pomegranates to make desserts, drinks, and side dishes.
- 3. Vegetables: You can roast veggies harvested in the fall, like Brussels sprouts and leeks, or use them to make soups and stews.
- 4. Nuts: Most nuts, such as hazelnuts and pecans, are harvested in the fall. Use nuts to make desserts like a pecan pie, as a salad topper, or a crumble for roasted vegetables.

- 1. Roasted butternut squash: Roasted butternut squash is one of the easiest and most satisfying things to prepare—there’s only one massive cut to make, then you scoop out the seeds, pop it in the oven on a sheet pan, and you’re done. Coat halved and seeded butternut squash in extra-virgin olive oil and season with kosher salt and black pepper, then arrange cut side down on a baking sheet. Roast at 400 degrees Fahrenheit for 25 minutes, or until a paring knife passes easily through the skin and the inner flesh is soft. You can even roast butternut squash alongside sweet potatoes, flavored with maple syrup for a perfect fall side dish.
- 2. Butternut squash soup: This soup is an easy dinner, and it can be a main dish or an appetizer. This soup recipe features butternut squash, shallots, curry powder, and garlic simmered in coconut milk and vegetable broth. Once the vegetables are cooked through, the mixture is puréed with an immersion blender or blender until smooth.
