What are deviled eggs?
Deviled eggs are an egg dish made up of hard-boiled egg halves filled with a creamy, egg yolk mixture. After the eggs are hard-boiled, you use the hardened egg yolks to create a stuffing that is then spooned into the egg-white halves. Deviled eggs are often spiced with cayenne, smoked paprika, or black pepper and can be served with a garnish, like dill or chives.
Deviled eggs are often served as a side dish or as an appetizer, and are a popular treat for the Easter holiday or at potlucks and BBQs.
A Brief History of Deviled Eggs
The classic deviled egg dish most likely originated from egg dishes made in ancient Rome:
- Ancient Rome: The beginning of deviled eggs has ties to ancient Rome when the Romans served main dishes with boiled eggs and sauces.
- Thirteenth century: Many dishes in Spain began using mashed yolks as a stuffing in hollowed-out eggs. Spices like pepper and coriander were added to the mixture, which would be stuffed between the halves of two eggs and skewered together on a stick.
- Fifteenth century: The mashed egg recipe spread across medieval Europe, and new toppings such as cheese and raisins began being added.
- Eighteenth century: The term “deviled” began being used to describe the process of making heavily spiced dishes, and eventually became most associated with the common hard boiled egg dish with a spiced yolk filling.
- Twentieth century and today: The deviled eggs dish is a common recipe nowadays. It has seen changes since it first came to be. For example, mayonnaise is used as a binder.

Begin by hard-boiling eggs. To create perfect hard-boiled eggs, place fresh eggs in a covered pot of cold water on the stovetop on high heat until the water is boiling. Once the water is boiling, remove them from the heat and leave them in the covered pot in the hot water for at least 10 minutes. Place eggs in a bowl of ice water to cool off, or place under cool running water.

Remove from the ice bath and peel the outer shells off of the hard-boiled eggs. Then slice each egg in half lengthwise.

Prepare the filling by remove yolks from the white egg halves using a spoon. In a small bowl or mixing bowl, add the egg yolks, mayonnaise, pickle juice or relish, mustard, salt, and pepper. Mix until well combined and creamy. You can also add other ingredients like horseradish, apple cider vinegar, or Worcestershire sauce at this step to create your own custom flavors.

Spoon mixture into the white egg halves. Hold one egg half in your hand and spoon a dollop of the egg mixture into the center. You can also use a piping bag for a more consistent appearance.

Season the tops of each deviled egg with black pepper, a sprinkle of paprika, or fresh dill. You can try other spices or sauces such as cayenne, sriracha, or hot sauce.
