Dried Okra Recipe: How to Make and Use Dehydrated Okra

Okra is a versatile vegetable, and dried okra is just as versatile, if not more so. You can season the dehydrated food, eat it as a snack, or use it as a crunchy topping for a cheesy baked pasta or other dish.

What Is Dried Okra?
Dried okra is fresh okra that you have dehydrated, such as in a food dehydrator or low-temperature oven. Okra plants are warm-weather crops, producing okra pods that are long, ridged, and green or red and contain edible seeds. Okra is a staple in Caribbean and Indian cuisines, as well as in the southern United States, where it appears often in hearty soups and stews, such as gumbo.
Although okra is technically a fruit, cooks utilize it as a vegetable, much like zucchini, in dishes.
With dried okra, you add the seasonings before beginning the drying process. This involves tossing the okra in olive oil or a neutral oil and the seasoning mix of your choice. Options might include Kosher salt and black pepper, Cajun seasoning, or garam masala. Alternatively, you can make your own combination of cayenne pepper, chili powder, cumin, garlic powder, onion powder, oregano, or paprika. For the longest shelf life, ensure there is no moisture left in the okra at the end of the drying process. Store the dried okra in an airtight container to retain as much freshness and crispness as possible.
How to Dehydrate Okra
Here are three devices you can use for dehydrating fresh or frozen okra to produce dried okra:
- Air fryer: Set the temperature to 130 degrees Fahrenheit. In the air fryer’s basket, lay out the whole or sliced okra in a single layer. Set the timer for twenty-four hours. This method is practical for small amounts of okra, but a large quantity of okra requires drying in batches since the air fryer basket is only so big. Slicing the okra into rounds can allow you to fit more in the basket.
- Food dehydrator: You have less temperature control when you use a food dehydrator since it only has one setting; however, the single temperature works for most foods, including okra. Dehydrate the okra for about twelve to eighteen hours, depending on their size.
- Oven: Drying okra in the oven will give you the most temperature control, as long as the oven can remain at a very low temperature. Most ovens only go as low at 170 degrees Fahrenheit, which is about forty degrees higher than the ideal drying temperature. You can still dehydrate okra in this type of oven, but keep in mind the end result might be baked or roasted okra. Preheat the oven to the lowest temperature possible—sometimes labeled “warm.” Slice the okra into rounds to ensure consistent drying, lay them on a sheet pan in a single layer, and then add them to the oven. Start checking the okra after about nine hours, then add time in one-hour increments until they are completely dry.

Consider using dried okra in the following ways:
- 1. As an appetizer: Well-seasoned dried okra is a viable appetizer. Serve it in a bowl with dips on the side. A creamy dressing or spicy chipotle dip might work well, depending on the seasoning on the okra.
- 2. As a side dish: The unique texture and flavor of dried okra can complement a main course. It pairs well with steak, mashed potatoes, sweet potato casserole, and other savory main dishes.
- 3. As a snack: Dehydrated okra is a crispy and crunchy snack you can substitute for potato chips or tortilla chips. To make okra chips, slice the whole okra into bite-size rounds, or cut the okra in half lengthwise, depending on the size of the okra. You can even try mixing the okra chips with other veggie chips, like kale chips.
- 4. As a topping: Crush dehydrated okra and mix it with breadcrumbs and olive oil to use as a topping for baked macaroni and cheese, green bean casserole, sweet potato casserole, or any other dish that might benefit from a crunchy topping.

Preheat the oven to the lowest possible temperature or set it to the “warm” setting, whichever is lower.

Fill a large bowl with warm water and add a vegetable wash. Soak the whole, uncut okra in the water for a few minutes, agitating them to remove any dirt or grime from the surface of the okra. Dry the okra completely with paper towels or a clean kitchen towel.

Once the okra is completely dry, cut the okra in half lengthwise. Dry out the inside of the okra with a paper towel if there is excess moisture.

In a jar, combine the garlic powder, onion powder, smoked paprika, cayenne pepper, cinnamon, salt, and black pepper. Place the lid on the jar and shake it to combine all the spices.

In a clean, dry large bowl, toss the okra with the olive oil to coat them. Then toss the okra with the seasoning mix.

Place the seasoned okra in a single layer on cookie sheets and dry them in the oven for 9 hours. Flip the okra and rotate the pan every couple of hours. After 9 hours, check the status of the okra, adding more time in one-hour increments (up to 12 hours) until the okra is completely dehydrated.

After the okra has dried completely, turn off the oven but do not remove the okra until the oven has cooled. Remove the okra from the oven and use it immediately or store it in an airtight container until you’re ready to use it.
