What Is Curry Udon?

Curry udon is a Japanese dish that features a dashi-based curry sauce served over thick, chewy udon noodles. You can incorporate a range of other ingredients into the dish, including potatoes, shiitake mushrooms, fried tofu, seafood, beef, pork, or chicken. Curry udon is one of the staple Japanese dishes made with this Indian-inspired curry, along with katsu curry and curry rice.

3 Tips for Making Curry Udon

When it comes to making curry udon, most Japanese recipes prioritize speed and ease. You can make this dish with limited time and ingredients.

  1. 1. Make your own roux. While you can make your own curry roux by adding curry powder and garam masala to a standard roux, a few brands of premade Japanese curry roux can also be found in most grocery stores, pre-portioned into cubes.
  2. 2. Buy pre-made noodles. You can make curry udon with fresh, frozen, or dried udon noodles—all of which you can find in Asian grocery stores. All three noodle options make for a quick, convenient meal; fresh noodles are best used soon after purchase.
  3. 3. Make the broth first. Dashi broth is easy to make ahead of time and store in the fridge until you’re ready to make the udon dish. You can also use instant dashi powder or udon soup base in a pinch.

Ingredients

    Heat the oil in a medium sauté pan over medium heat. Add onions and mushrooms to the pan, and cook until softened, 5–7 minutes.

    Meanwhile, bring a large pot of water to a boil.

    Add dashi, sake, and soy sauce to onion and mushrooms, and bring to a boil. Lower the heat to medium, and add cubes of roux one at a time, stirring to dissolve fully. Remove from heat, and cover. Set aside.

    Add noodles to boiling water and cook according to package instructions (cooking times for frozen, dried, or fresh will vary). Drain and portion the noodles into serving bowls.

    Ladle the curry soup over the noodles and garnish it with scallions.
