  2. 2. Always add a starch. Mixing a starch like cornstarch or baking powder into your fruit mixture safeguards against a soppy cobbler by coagulating the juices of the ripe fruit.
  3. 3. Leave room while you’re scattering the topping. Leaving space between the portions of cobbler topping will prevent the fruit from steaming the underside of the topping, which could result in mushy, undercooked dough.
