Whole ears of sweet corn get seasoned and roasted in an oven until the kernels turn tender, and the vegetable’s natural sweetness has mellowed into something softer and more savory. Home cooks serve the finished corn cobs with various accompaniments and seasonings.

Sweet corn is the most common variety of corn for roasting, as it’s widely available in grocery stores and farmers’ markets. The nutritional profile of corn includes potassium, vitamin C, and vitamin B6. Corn, which is more than seventy percent water in its composition, is also high in carbohydrates and contains no saturated fat.

3 Tips for Oven-Roasting Corn on the Cob

Corn on the cob is one of the most approachable dishes of the summer, and it’s made even easier by omitting the grill. Here’s what to know:

  1. 1. Season before roasting. For best results, baste the fresh cobs in a layer of melted butter or olive oil and season them with salt and pepper before wrapping them in foil. The kernels will take on a flavorful foundation as the cobs cook within their wrappers.
  2. 2. Experiment with different toppings. For a classic pairing, serve corn on the cob with flavored butter infused with fresh herbs or aromatics, like garlic butter or chive butter. For a dish inspired by Mexican elote and esquites, serve your cobs with lime crema, cilantro, and cotija cheese for sprinkling, or channel Japanese cuisine with a layer of Japanese mayonnaise and togarashi. Alternatively, set out an assortment of spices and seasonings, and let your guests decide between a sprinkle of garlic powder or freshly grated Parmesan cheese.

Ingredients

    Preheat the oven to 375 degrees Fahrenheit.

    Shuck the husks off of the ears of fresh corn and snap off the stem at the bottom. Remove as much corn silk as possible.

    Prepare one piece of aluminum foil per ear of corn.

    Brush the corn with melted butter or oil, and season with salt and black pepper.

    Wrap the ear of corn fully in the aluminum foil.

    Place the corn on a baking sheet lined with more aluminum foil and roast until tender and slightly golden, 20–25 minutes.

    While the corn roasts, in a small bowl, combine the crema, lime zest, lime juice, and smoked paprika.

    Season the crema with salt and pepper to taste and place it in the refrigerator until you’re ready to serve.
