Corn casserole—or corn soufflé or corn pudding—is a side dish that you bake in a casserole dish or cast-iron pan and contains fresh corn kernels, canned corn, or creamed corn. It’s a warm, creamy, and cheesy comfort food, especially as a Christmas holiday meal or for Thanksgiving dinner. This family favorite differs from green bean casserole in that the corn mixture becomes a batter, similar to a cornbread mix, and becomes light, fluffy, and golden brown as it bakes in the oven.

There are numerous variations on creamed corn casserole, but the flavor profile remains fairly consistent. Here are a handful of tips for making your own corn casserole:

Preheat an oven to 350 degrees Fahrenheit and spray an 8-inch-by-8-inch baking dish with cooking spray or grease it with butter. Set that aside.

Melt the unsalted butter in the microwave or on the stovetop. Let it cool while you mix the other ingredients.

In a large bowl, add the cans of corn, sour cream, whole milk, and large eggs. Whisk to combine.

In a separate large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, sugar, salt, black pepper, and half of the grated cheese.

Pour the corn mixture into the flour and cornmeal mixture and stir it all together to combine the ingredients.
