A Coconut Mojito is a fruity variation on a Mojito, the classic Cuban rum cocktail. A Classic Mojito contains light or dark rum, lime juice, mint, soda water, and simple syrup. A Coconut Mojito omits the simple syrup and adds cream of coconut, a sweetened blend of coconut flesh, water, and sugar.

Follow these tips to make a flavorful, creamy Coconut Mojito:

  1. 1. Use light rum. A traditional Mojito recipe calls for light rum or dark rum. To make a Coconut Mojito, use light rum, which is sweeter. You can also use coconut rum to boost the coconut flavor.
  2. 2. Blend your cocktail. Similar to a Piña Colada, you can blend a Coconut Mojito. Add all of the ingredients—except for the soda water—and blend it to make a creamy and refreshing cocktail.
  3. 3. Add coconut milk. Instead of cream of coconut, you can use unsweetened coconut milk or coconut water to make a Coconut Mojito.     Separate the mint leaves from their stems, leaving the tops intact. Discard the stems and set the tops aside.

    Drop the mint leaves into a cocktail shaker. Using a muddler or the back of a wooden spoon, muddle the mint leaves to release their flavor.

    Add the cream of coconut, lime juice, white rum, and ice to the cocktail shaker.

    Put the lid on the cocktail shaker and shake vigorously for at least thirty seconds.

    Fill a tall glass with crushed ice or regular ice cubes.

    Strain the mixture into a cocktail glass.

    Top off the glass with club soda. Insert a straw.

    Make a mint bouquet: Collect the mint tops from step one and place them tightly in your palm. Lightly brush them with your opposite hand until they are upright and uniform.
