Coconut flour brownies are gluten-free and grain-free fudge brownies that use coconut flour instead of all-purpose flour. Coconut flour is an alternative to almond flour, such as in nut-free recipes for chocolate cake, chocolate chip cookies, muffins, and other baked goods.
You can make vegan coconut flour brownies by using an egg substitute, vegan dark chocolate chips, and unsweetened cacao powder. Keep the dessert dairy-free by using vegan butter instead of regular butter. If cutting down refined sugar is also important to you, a sweetener like maple syrup, coconut sugar, monk fruit, or honey is a good alternative.

Coconut flour absorbs a lot of moisture, meaning other aspects of the recipe have to compensate accordingly to still produce chewy baked goods, such as fudgy brownies. Here are a few tips for achieving good results when baking with coconut flour:
- 1. Add extra liquid or oil: Since coconut flour absorbs more liquid than wheat flour, it’s necessary to accommodate for that unless you’re using a recipe that specifically calls for coconut flour. When substituting coconut flour, it’s necessary to add slightly more liquid or oil than the recipe instructs if you want to achieve the right texture. Coconut milk, coconut oil, neutral oil, or olive oil should work well in most recipes.
- 2. Leave out excess drying ingredients: Some brownie recipes call for peanut butter, toasted pecans, or other mix-ins. These ingredients have the potential to draw moisture from the brownie batter, so adding them in conjunction with using coconut flour will result in a dry and crumbly brownie. Opt for chocolate chips or a sweet cream cheese swirl instead, both of which will contribute moisture to the recipe.

Preheat the oven to 350 degrees Fahrenheit.

Grease a square baking dish with nonstick cooking spray and line the baking pan with parchment paper.

In a large bowl, combine the unsweetened cocoa powder, 2 tablespoons of coconut flour, baking powder, baking soda, salt, and chocolate chips.

In a medium microwave-safe bowl, microwave the butter, coconut oil, and dark chocolate until the ingredients have melted.

Whisk the coconut sugar into the melted butter and chocolate until the mixture is lighter in color and smooth in texture.

Whisk in the eggs, one at a time, mixing thoroughly after each addition.
