Chocolate zucchini bread is a quick bread made with grated zucchini and chocolate. Quick breads, like classic zucchini bread and banana bread, get their rise from baking soda and/or baking powder, rather than yeast. The shredded zucchini adds moisture to this chocolate loaf, yielding a fudgy texture and all the flavor of a chocolate cake. It's the perfect way to sneak veggies into a chocolatey baked good and to use up a glut of zucchini in the summer season.

Zucchini bread is a crowd-pleasing food with a flexible format that can accommodate a few tweaks. If it’s your first time making zucchini bread, check out the following tips:
- 1. Avoid overmixing. Overmixing quick bread batter will result in a stodgy, dense loaf. For a pillowy, moist cake-like crumb, mix the bread batter just until combined.
- 2. Make single portions. Divide zucchini bread batter into personal portions using a cupcake tin to make zucchini muffins or mini loaves in mini loaf pans. Preheat the oven to 350 degrees Fahrenheit.

Lightly grease a 9-inch loaf pan with butter, vegetable oil, or cooking spray.

Line the loaf pan with parchment paper, leaving a generous overhang on the long edges.

In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.

In a large bowl, combine the zucchini, sugar, eggs, butter or oil, and vanilla.

Add the dry ingredients to the wet ingredients and stir until just combined. Do not over-mix.

Add the chocolate chips and stir until just combined.

Pour the batter into the prepared loaf pan and bake until a toothpick inserted into the center of the loaf comes out clean, about 1 hour.
