The shredded zucchini adds moisture to this chocolate loaf, yielding a fudgy texture and all the flavor of a chocolate cake. It's the perfect way to sneak veggies into a chocolatey baked good and to use up a glut of zucchini in the summer season.

Ingredients

    Preheat the oven to 350 degrees Fahrenheit.

    Lightly grease a 9-inch loaf pan with butter, vegetable oil, or cooking spray.

    Line the loaf pan with parchment paper, leaving a generous overhang on the long edges.

    In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.

    In a large bowl, combine the zucchini, sugar, eggs, butter or oil, and vanilla.

    Add the dry ingredients to the wet ingredients and stir until just combined. Do not over-mix.
