What Are Truffles?

Chocolate truffles are no-bake candies traditionally made of baking chocolate, butter, and cream. Named after dark, round truffle mushrooms, confectioners roll these no-bake candies into small balls inspired by the shape of their namesake. These candies come in various flavors with an array of sweet toppings, including chopped nuts, cocoa powder, grated coconut, mini chocolate chips, chocolate ganache, and sprinkles.

14 Types of Chocolate Truffles

The simplicity of chocolate truffles makes them the perfect sweet to customize. Some of the most popular varieties of chocolate truffles include:

  1. 1. Black Forest truffles: These dark chocolate truffles, named after the famed German cake, feature a filling of dried cherries and cherry liqueur.
  2. 2. Caramel truffles: Caramel truffles feature a caramel core. Confectioners typically top these candies with additional caramel sauce and a sprinkle of flaky salt.
  3. 3. Chocolate mint truffles: These refreshing candies contain a filling of mint extract or fresh mint.
  4. 4. Coffee truffles: These caffeinated truffles feature instant coffee powder to create a savory, slightly bitter candy.
  5. 5. Dark chocolate truffles: These candies call for semisweet or bittersweet dark chocolate instead of lighter milk chocolate.
  6. 6. French truffles: This simple chocolate and cream truffle features a coating of crushed nuts.
  7. 7. Milk chocolate truffles: Confectioners use milk chocolate and heavy cream to make these traditional truffles.
  8. 8. Peanut butter truffles: Chocolate truffles with a peanut butter core showcase a classic sweet flavor combination.
  9. 9. Peppermint truffles: This holiday-friendly candy features dark chocolate, peppermint extract, and crushed candy cane bits.
  10. 10. Praline truffles: Praline truffles are milk or dark chocolate candies with a whole nut (such as an almond, pecan, or hazelnut) or nut paste tucked into their centers.
  11. 11. Spanish truffles: This dark chocolate truffle traditionally counts condensed milk and liqueur (such as rum) as two key ingredients. This candy also comes with a chocolate sprinkle coating.
  12. 12. Swiss truffles: Confectioners shape these classic chocolate candies in molds and coat them in cocoa powder.
  13. 13. Vegan truffles: Vegan truffles replace traditional dairy ingredients with non-dairy alternatives like coconut cream.
  14. 14. White chocolate truffles: This creamy twist on a traditional truffle uses melted white chocolate instead of classic milk chocolate.

5 Tips for Making Chocolate Truffles

This easy no-bake dessert is easy for home cooks of all experience levels to make. Follow these tips to make the most of your homemade chocolate truffles.

  1. 1. Use high-quality chocolate. Splurge on high-quality bittersweet or semisweet chocolate to make the best possible truffles. The flavor and quality of this ingredient will determine the overall taste of the candies.
  2. 2. Heavy cream is key. Always use heavy cream to make chocolate truffles. Swapping it out for half-and-half or whole milk can result in an impliable candy mixture that is difficult to shape and mold.
  3. 3. Experiment with additions. Once you’ve mastered a basic truffle recipe, incorporate different sweeteners, spices, extracts (like peppermint, orange, or vanilla extract), fillings, and other flavorful additions into your candy base.
  4. 4. Get creative with toppings. Roll these simple truffles in different toppings for variations in appearance and flavor. Popular toppings include grated coconut, crushed nuts (like pistachios, peanuts, pecans, and walnuts), unsweetened cocoa powder, confectioners’ sugar, and chocolate sprinkles.
  5. 5. Store properly. Store your homemade truffles in an airtight container in the refrigerator for up to 5 days. For long-term storage, freeze the candies in a freezer-proof bag for up to 3 months. For the best result, thaw them to room temperature before serving.
