A chocolate pudding is a chocolate-flavored custard made by cooking milk or cream with thickening agents such as eggs, flour, and cornstarch. The silky texture of chocolate pudding is not as airy as chocolate mousse, but it’s simpler to make at home.
6 Tips for Making Homemade Chocolate Pudding
Follow these tips to make bakery-quality chocolate pudding at home:
- 1. Combine different forms of chocolate. For sweeter pudding, use semisweet chocolate or milk chocolate. For a chocolate pudding with an intense chocolate flavor, mix high-quality chocolate chips with a bit of cocoa powder. You can also garnish your pudding with chopped chocolate.
- 2. Add a bit of coffee. A small amount of coffee flavoring can add depth to chocolate desserts.
- 3. Make it lactose-free. Replace all of the dairy in this recipe with full-fat coconut milk or almond milk for a dairy-free indulgence.
- 4. Strain the pudding mixture. For smooth, creamy pudding, strain the pudding mixture through a fine-mesh strainer before chilling. This extra step will remove any clumps of cornstarch or milk solids.
- 5. Cover your pudding. Tightly cover your pudding with plastic wrap to prevent skin from forming on the top of the dessert.
- 6. Make chocolate pudding pie. You can use your chocolate pudding to make various dessert recipes, such as filling for pudding pie, chocolate peanut butter trifle, or fudge brownies.

In a medium saucepan, whisk together sugar, cornstarch, cocoa powder, espresso powder, and salt.

In a large bowl, whisk together egg yolks, milk, cream, and vanilla.

Slowly add the wet ingredients to the dry ingredients, constantly whisking until smooth.

Bring the saucepan to the stovetop and cook, continuing to whisk, over medium-high heat.

When the mixture comes to a boil, reduce to medium heat.

Keep whisking until the mixture thickens, about 5 minutes.

Set a fine-mesh strainer over a large bowl.

Using a rubber spatula, scrape and pour the pudding through the strainer into the bowl.
