What Are Chocolate Drop Cookies?

A chocolate drop cookie is a cookie with free-form dough that features chocolate. “Drop cookie” is a term applied to cookie recipes where bakers “drop” cookie dough from a spoon or cookie scoop onto a baking sheet rather than roll it out or cut it into specific shapes. A basic drop cookie recipe contains butter, sugar, egg, vanilla extract, flour, salt, and a leavening agent, like baking soda or baking powder. Chocolate drop cookie recipes include chocolate chips or cocoa powder in the batter to add chocolate flavor.

3 Tips for Making Chocolate Drop Cookies

Follow these tips to customize your chocolate drop cookies:

  1. 1. Use brown sugar. Brown sugar, made with molasses, brings extra moisture to the cookie dough. To guarantee a soft center, take the cookies out of the oven just as they turn dry and golden brown around the edges, usually around the ten-minute mark. For crispier cookies, use lower-moisture white sugar, and bake them a few minutes longer.
  2. 2. Chill the dough. You can chill the dough for an hour before portioning it onto prepared cookie sheets to prevent spreading.
  3. 3. Add mix-ins. In addition to semisweet chocolate chips, other popular add-ins include white chocolate chips, pecans, peppermint, and peanut butter. You can also dust your chocolate drop cookies with powdered sugar for added sweetness.

Ingredients

  1. 1

Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper or a silicone baking mat. In the bowl of a stand mixer fitted with the paddle attachment, or using an electric mixer, cream together the butter and sugar until light and fluffy, about 4 minutes.

  2. 2

Add the egg and vanilla extract and beat to combine.

  3. 3

In a separate large bowl, whisk together the flour, baking soda, salt, and cocoa powder.

  4. 4

Add the flour mixture to the butter mixture and mix on low speed until combined.

  5. 5

    Stir in the chocolate chips.

  6. 6

Use a medium cookie scoop (a little over a tablespoon) and drop each cookie dough ball onto the cookie sheet, spacing the cookies two inches apart.

  7. 7

Bake the cookies until the edges are crisp, about 10–12 minutes.

  8. 8

Let the cookies cool slightly on the baking sheet before transferring to a wire rack to cool completely.

  9. 9

Dust with powdered sugar, if using.
