What is Butterscotch?
Butterscotch is traditionally a hard candy, but the flavor comes in many other forms, too. There are butterscotch syrups, butterscotch morsels (similar to chocolate chips), and various other butterscotch sweet treats.
To make butterscotch, confectioners cook down butter with brown sugar until the ingredients reach the hardball stage on a candy thermometer. The process is similar to making caramel; however, caramel uses heavy cream or a dairy substitute, while butterscotch uses only butter and sugar.
What Are Butterscotch Brownies?
You can make butterscotch brownies by including butterscotch flavor (a combination of butter and brown sugar) in the batter for chocolate brownies. Swirl butterscotch chips or butterscotch cheesecake batter into the brownie batter for a fudgy, chewy brownie recipe. Alternatively, make a butterscotch buttercream frosting to spread on top of the brownies.
A chocolate-less version of brownies, blondies pair well with butterscotch, too, since brown sugar is a primary ingredient in blondies. Butterscotch blondies are extra-sweet due to both the blondie batter and the butterscotch. Sprinkle coarse sea salt over the tops of the brownies to break up the sweetness and add a contrasting flavor.

Preheat the oven to 350 degrees Fahrenheit.

Grease a square baking dish with cooking spray and line it with parchment paper.

In the microwave, melt the unsalted butter.

In a large mixing bowl, combine the light brown sugar and granulated sugar.

In a separate mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, salt, chopped butterscotch candy, and other mix-ins.

Add the eggs, one at a time, mixing thoroughly between each addition.
