What Are Brookies?

Brookies, a portmanteau of brownies and cookies, are baked goods with a chocolate chip cookie layer on top of a brownie base. The chewy and fudgy brownie bottom complements the golden brown and slightly crispy cookie topping. Both layers of the cookie bar bake together, so the cookie dough bakes into the brownie batter. Classic brookies consist of a chocolate brownie layer with a chocolate chip cookie top, but any brownie or blondie combination works.

Making two batters for one dessert takes time and focus. Try these tips to help you make brookies:

  1. 1. Chill the two batters before baking them together: Since brookies require you to make one dough at a time, chill both doughs before baking so they go into the oven at the same temperature. Chilling the doughs ensures an even bake.
  2. 2. Try adding nuts: Chocolate is the classic choice for both the brownie and cookie layers, but you can add nuts or nut butter to one or both layers for added flavor. Add peanut butter to the brownie layer for a gooey texture, or mix pecans into the cookie layer for added crunch.
  3. 3. Use unsweetened cocoa powder for the brownie layer: Brown sugar, white sugar, and chocolate chips add sweetness to the brownie and cookie layers. Use unsweetened cocoa powder to cut down on the sweetness and add a touch of bitterness to balance out the dessert.

Make the brownie batter:

    In a double boiler, melt the chocolate chips and butter until combined.

    In a mixing bowl, combine the cocoa powder, flour, baking powder, and salt. Set the bowl aside.

    Take the butter and chocolate off the heat and whisk the brown sugar into the mixture.

    Whisk in the eggs one at a time.

    Stir the flour mixture into the chocolate and butter mixture.

    Cover the brownie mix with plastic wrap and refrigerate it while you make the chocolate chip cookie dough.

Make the chocolate chip cookie dough:

    In a medium bowl, add the flour, baking powder, baking soda, salt, and chocolate chips. Set this bowl aside.

    In the bowl of a stand mixer fitted with a paddle attachment, beat the brown sugar and granulated sugar with the butter.

    Add in the eggs one at a time.

    Mix in the vanilla extract.

    With the mixer on low speed, slowly add the flour mixture to the wet ingredients.

    Cover the cookie dough with plastic wrap and refrigerate it for 1 hour.

Combine the brownie batter and cookie dough and bake:

    Preheat the oven to 350 degrees Fahrenheit.

    Grease a square baking dish with cooking spray or melted butter and line it with parchment paper.

    Spread the brownie batter evenly on the bottom of the prepared pan.
