Broiled scallops are a seafood dish made by tossing fresh bay scallops in seasoned butter and roasting them under a high-heat broiler. Scallops cook quickly and are naturally tender, with a mild, sweet ocean flavor like a seafood marshmallow. When seared in a broiler, the scallops’ natural sugars form a crispy, caramelized crust. For a sophisticated appetizer or main course, serve broiled scallops atop risotto or alongside roasted veggies.

Follow these simple tips to craft perfectly broiled scallops every time:
- 1. Use fresh, quality scallops. For the best flavor, purchase fresh scallops from your local fishmonger or grocery store. Look for large, dry sea scallops, which tend to be the sweetest and most flavorful.
- 2. Prepare frozen scallops properly. If you only have access to frozen scallops, defrost them overnight in the fridge in a colander set over a bowl to ensure they don’t sit in their own moisture. Never roast scallops straight from the freezer because they retain a lot of water, which will impact the cook.
- 3. Watch closely as they broil. Since scallops cook quickly, keep a close eye on them throughout the broiling process to prevent overcooking. Remove the scallops from the oven when they are golden brown on the surface. Learn how to broil properly.
- 4. Remove the scallops from the pan immediately. After removing the scallops from the oven, immediately transfer them to a cool plate. If left in the pan, they will continue to cook, becoming tough and chewy in the process.
