A brisket quesadilla is a spin on a traditional Mexican dish consisting of shredded brisket, melted cheese, and diced red onion sandwiched between two flour tortillas. In Mexican cuisine, quesadillas are part of the vast family of foods known as antojitos (“little cravings”), which are small, savory bites that diners enjoy as appetizers or late-night drinking snacks. This BBQ-friendly quesadilla variation puts leftover brisket meat to good use, resulting in a tasty fusion dish requiring minimal effort.

Follow these simple tips to make the best beef brisket quesadillas possible:
- 1. Adjust the fillings. Customize your brisket quesadillas by incorporating your favorite veggies, beans, cheeses, and spices into the filling. Add roasted vegetables like peppers, onions, summer squash, and tomatoes. Incorporate refried beans or pinto beans for extra protein. Toss your smoked brisket in your favorite store-bought or homemade BBQ sauce. Change up the cheese with shredded Monterey Jack, Colby Jack, Pepper Jack, or cheddar cheese.

In a small saucepan over medium heat, stir together the shredded brisket, barbecue sauce, and beef broth and cook until it absorbs the liquid and warms through, about 5 minutes. Season the brisket with salt and black pepper to taste.

Grease a large skillet or griddle with a thin layer of olive oil and warm it over medium-high heat.

Place one flour tortilla in the frying pan and top it with a ¼ cup of cheese. Top the cheese with half of the beef brisket, diced red onion, and cilantro, followed by another ¼ cup of cheese.

Place a second tortilla on top of the filling. Using a spatula, lightly press down on the top tortilla and cook for 3 minutes. Carefully flip the quesadilla over, and continue cooking until it is crispy and golden brown, another 3 minutes.

Transfer the cooked quesadilla to a cutting board or plate, and repeat this process with the remaining ingredients.
