Breakfast tacos and breakfast burritos are easy breakfast dishes that typically feature the same ingredients, but they are served differently. Breakfast tacos are served open face on smaller tortillas, about six inches in size. Breakfast burritos are wrapped tightly to envelop the filling completely. Breakfast burritos require a larger tortilla, about ten to twelve inches in diameter.

When making breakfast tacos, consider the following flavor combinations and ingredients:

  1. 1. Make Tex-Mex tacos. Breakfast tacos don’t usually contain conventional taco ingredients like rice and black beans. However, you can use a hybrid of Mexican and American ingredients for a southwestern or Tex-Mex style breakfast taco. Try incorporating ingredients like chorizo sausage, jalapeños, pico de gallo, guacamole, refried beans, or chopped fresh cilantro for a southwestern flavor profile.

    Heat 1 tablespoon of olive oil in a large nonstick skillet over medium-high heat. Lay the bacon in the pan in a single layer. Turn the bacon as needed, cooking until the bacon is crispy, about 10 minutes. Carefully transfer the bacon to a paper towel-lined plate, and set it aside. Do not discard the bacon grease.

    Add the chopped potatoes to the hot skillet, then season with ½ teaspoon kosher salt and ¼ teaspoon pepper. Sauté the potatoes in the bacon grease, turning them over occasionally until each side is crispy, about 10 minutes. Add paprika and cayenne, if using, for a spicy kick. Transfer the potatoes to a bowl and cover to keep warm.

    Add the remaining tablespoon of olive oil to the same skillet and set over medium heat. Add the eggs to the skillet and scramble lightly, about 2 minutes. Season to taste with salt and pepper.
