A blueberry turnover is a baked treat consisting of a sweet and tangy blueberry filling encased in a triangle of flaky, buttery puff pastry dough. These popular breakfast and brunch treats are easy and quick to make with blueberry purée and store-bought pastry dough.

Follow these tips to make the best blueberry turnovers possible.
- 1. Mix and match fruits. Once you’ve mastered a basic blueberry turnover, experiment with adding additional fruit to the filling, including berries, like raspberries and blackberries, or stone fruits, like peaches and apricots.
- 2. Experiment with additions. Adjust the blueberry filling to include various sweeteners, extracts, and spices. Substitute maple syrup, agave, or honey for sugar. Incorporate vanilla extract, orange extract, or almond extract. Add some citrusy notes with lemon extract, lemon juice, or lemon zest. Incorporate spices like cinnamon and nutmeg. Top the turnovers with sprinkles, coarse sugar, or cream cheese frosting.
- 3. Avoid overfilling. Resist the urge to stuff your turnovers with lots of filling, which could result in the fruit leaking out during the baking process.

Preheat an oven to 425 degrees Fahrenheit, and line a baking sheet with parchment paper.

In a small saucepan over medium heat, combine the blueberries, sugar, cornstarch, and water. Using a wooden spoon, mash the blueberries lightly.

Bring the blueberry mixture to a boil and reduce the heat to low. Simmer the sauce until it thickens, about 2–3 minutes.

Remove the pan from the heat, and set the blueberry sauce aside to cool for about 5 minutes.

On a lightly floured work surface, roll out the sheets of puff pastry and cut the dough into 4 equal-sized squares.

Transfer the puff pastry squares onto the prepared baking sheet.

Spoon 2–3 tablespoons of blueberry filling into the center of each square.

Fold the puff pastry in half diagonally over the blueberry filling to form a triangle, and line up the edges.

Using a fork or your fingers, crimp together the edges of the pastry dough to seal them tightly.

In a measuring cup or small bowl, beat the egg and stir in a drizzle of water to form the egg wash.

Using a pastry brush, apply the egg wash to the top of each turnover.

Transfer the baking sheet to the oven, and bake the turnovers until they are golden brown, about 15 minutes. Remove the pastries from the oven and let them cool for 20 minutes.
