What Is Blueberry Sauce?
Blueberry sauce is a thick and glossy sweet-tart sauce that uses fresh blueberries and citrus juice. You can use lemon juice, as is common, but orange juice also works. When you boil the blueberries with sugar and lemon juice, it releases the blueberries’ juices and flavor. The homemade blueberry sauce will last in the refrigerator in an airtight container, such as a jam jar, for about five days.
How to Use Blueberry Sauce
Use a sweet and tart blueberry sauce in one or more of these five ways:
- 1. Add moisture and flavor to cakes. Professional bakers often use a soak to keep cakes moist, and you can use a blueberry sauce to do the same. While sugar syrup or milk are common choices, a fruit sauce like blueberry sauce will add color in addition to blueberry flavor. Try soaking your next pound cake, angel food cake, or coffee cake in blueberry sauce.
- 2. Create a pie filling. Blueberry sauce is already somewhat thick, but you can convert it into a pie filling by adding whole blueberries to increase its consistency. Toward the end of the blueberry sauce’s cooking process, add fresh blueberries to create a gooey filling. Fill a butter pie crust with the blueberry mixture, then top the dish with another pie crust or crumble topping before you bake it.
- 3. Spoon blueberry sauce over cheesecake. Fruit toppings are a popular addition to cheesecake, regardless of whether or not the cheesecake already contains a fruit swirl. Mix blueberry sauce into your cheesecake mixture or use it to top a vanilla cheesecake.
- 4. Swirl blueberry sauce into vanilla ice cream. Mix blueberry sauce into homemade ice cream as it churns, or swirl it into storebought ice cream. While both the ice cream and the blueberries are sweet, the blueberries add citrus flavor and a slight tartness many find appealing.
- 5. Use blueberry sauce in place of maple syrup. A blueberry sauce adds a bright, fresh flavor to breakfast foods like waffles, French toast, pancakes, and crêpes. Playing off of the flavors in each breakfast dish, the sauce will highlight any existing sweetness.

In a large bowl, lightly mash 2 cups of blueberries. If you’re using frozen blueberries, defrost them first.

In a medium saucepan over medium heat on the stovetop, combine the mashed blueberries, remaining whole blueberries, lemon juice, lemon zest, sugar, and ½ cup of water.

Cook the blueberry mixture for 10 minutes.

In a small bowl, mix the remaining 4 tablespoons of water with the cornstarch.

Add the cornstarch slurry to the blueberry sauce.

Increase the heat to medium-high and bring the blueberry sauce to a simmer.

Continue cooking the blueberry sauce until it coats the back of a metal spoon, about 5 more minutes. The desired thickness is thick but fluid.

Allow the sauce to cool slightly before using it, or allow it to cool to room temperature before transferring it to a glass jar with a lid. Store the blueberry sauce in the refrigerator for up to 5 days.
