What Is Blueberry Curd?
Blueberry curd is a sweet, tart, thick, and creamy mixture of blueberries, sugar, eggs, lemon juice, and butter. It’s a spreadable condiment with many culinary uses. Puréeing the blueberries keeps the curd smooth and creamy, as opposed to chunky like a blueberry jam.

Ice cream and other sweet desserts, as well as savory meat and cheese boards, can benefit from the addition of blueberry curd. Here are more forms the ingredient can take:
- 1. Dessert filling: When making cupcakes, you can cut a little hole in the center of the cupcake to fill with blueberry curd before you frost them. Blueberry curd is also a sweet filling for French macarons and a potential filling for a layer cake.
- 2. Fruit tarts: Spread a thin layer of blueberry curd on the bottom of tart shells. You can use blueberry curd as the entire filling for the fruit tart, or layer it with another curd, such as lemon curd.
- 3. Cheesecake: Mix blueberry curd into cheesecake batter to flavor the cheesecake without adding additional moisture to the batter. Curd maintains its structure in cheesecake batter and will produce a swirl pattern in the finished dessert. Alternatively, spoon blueberry curd onto the top of the whole cheesecake or individual slices.
- 4. Breakfast foods: Top waffles or pancakes with blueberry curd instead of maple syrup for a sweet and tart topping. Or fill crêpes with the fruit curd and top them with powdered sugar or whipped cream.
- 5. Scone spread: Clotted cream and lemon curd are classic spreads for scones. Try switching out the lemon curd for blueberry curd, especially a blueberry curd that has lemon juice and lemon zest in it.

Blueberry curd recipes are fairly standard, but there are steps you can take to make the process go smoothly and produce good results.
- 1. Add lemon. Adding plenty of lemon juice and lemon zest to a blueberry curd thickens the curd and introduces a complementary flavor.
- 2. Purée the blueberries. For a smoother consistency and less waste at the end of the process, use blueberry purée instead of blueberry juice.
- 3. Store the curd properly. Store blueberry curd in sterilized jars for the longest shelf life—about two weeks unopened. Alternatively, blueberry curd lasts in the refrigerator in non-sterilized jars for about a week.
- 4. Use a double boiler. To make the cooking process as easy as possible, use a double boiler. Add a couple inches of water to a small saucepan and place a heatproof bowl with the blueberry mixture inside the saucepan, making sure the bottom of the bowl isn’t touching the water. Bring the water to a boil and cook the curd in the bowl.

In a food processor, combine the blueberries and water. Blend until the mixture is smooth.

In a separate bowl, whisk together the blueberry purée, lemon juice, granulated sugar, cornstarch, whole eggs, egg yolks, and salt.

In a medium saucepan over medium heat, bring the blueberry and egg mixture to a boil and cook for about 4 minutes. Then, reduce the heat to medium-low heat or low heat. Continue cooking for an additional 10 minutes, whisking constantly, until the curd thickens.

Test the thickness of the curd on a wooden spoon. Run your finger down the middle of the spoon coated with the curd. If the line holds, it’s ready.

Remove the curd from the heat and stir in the butter, one cube at a time, making sure one cube has fully emulsified before you add the next.

Run the curd through a fine-mesh strainer to remove any lumps.

Cover the curd with plastic wrap, with the plastic wrap touching the surface of the curd to prevent a skin from forming. Refrigerate for 2 hours or up to 10 days before enjoying the curd.
