What Is Blueberry Cornbread?
Blueberry cornbread is a classic cornbread recipe with blueberries as a main ingredient. Use fresh blueberries or frozen blueberries, depending on accessibility and seasonality. Blueberry cornbread is similar to blueberry muffins, another quick bread, save for the addition of cornmeal, which adds texture and a nutty flavor.
3 Ways to Serve Blueberry Cornbread
Blueberry cornbread is a sweet treat that complements dishes and meals of all types. Here are a few different ways to serve blueberry cornbread:
- 1. As a side dish: Blueberry cornbread is a rare side dish for soups, stews, and other savory dishes, unlike a classic cornbread. But it is a complementary side dish option for fruit, pancakes, eggs, sausages, and other foods you might find on a breakfast platter.
- 2. For breakfast: Blueberry cornbread or blueberry cornbread muffins can serve as a stand-alone breakfast food. For example, you can enjoy the sweet cornbread the same way you might a toast or scone, topping it with honey butter, jam, or another sweet spread.
- 3. For dessert: Try cutting up blueberry cornbread into cubes or crumble it into smaller chunks, then toast it in a pan with melted butter. Use that as a topping for ice cream or other creamy desserts that might benefit from a bit of crunch and salt.
4 Variations on Blueberry Cornbread
If you want to put a fresh spin on your blueberry cornbread dish, here are a handful of ways you can adjust the recipe:
- 1. Add lemon zest. Lemon and blueberry is a classic flavor combination, especially during the warm summer months. Adding lemon zest to a blueberry cornbread batter adds a hint of lemon flavor without too much acidity.
- 2. Add sour cream instead of buttermilk. Most traditional cornbread recipes call for buttermilk as the cultured dairy product to add moisture and a tangy flavor and to produce a tender crumb. If you don’t have buttermilk on hand, you can instead use full–fat sour cream to give the blueberry cornbread the same result.
- 3. Bake the cornbread in a muffin tin. Instead of baking your cornbread in a square baking dish or cast-iron skillet, you can use a muffin tin to produce a handheld cornbread. Decrease the recipe’s cooking time if you’re not following a specific cornbread muffin recipe.
- 4. Make a streusel topping. To mimic a traditional blueberry muffin even more, mix together brown sugar, butter, and all-purpose flour in a small bowl to make a sweet and crispy streusel topping. Add this topping to the batter before you place the tin or tins in the oven. As the cornbread cooks, the topping will brown and bake into the cornbread.

- 1
Preheat the oven to 350 degrees Fahrenheit.
- 2
Grease a baking pan, like a square baking dish or a cast-iron skillet, with additional butter, vegetable oil, or a nonstick cooking spray.
- 3
In a large bowl, combine the flour, cornmeal, sugar, salt, and baking powder.
- 4
In a separate large bowl, whisk together the buttermilk, milk, and eggs.
- 5
Add the wet ingredients to the dry ingredients, mixing just until everything combines. This will prevent too much gluten from forming. Then gently stir in the blueberries and melted butter.
- 6
Pour the batter into the prepared pan and spread it in an even layer with a butter knife or an offset spatula.
- 7
Bake the blueberry cornbread in the oven until it’s golden brown and baked through completely, about 35 minutes. Stick a toothpick into the cornbread. If it comes out clean, with no wet batter clinging to it, the cornbread is ready.
- 8
Let the cornbread cool to room temperature before you slice and serve it.
