While a traditional galette filling consists of fruit, butter, and sugar, many chefs prepare galettes with rich, savory fillings or a wide array of sweet or fruit mixtures, like blackberry.

Making a satisfying blackberry galette is similar to making other galettes, like apple galette, pear galette, and blueberry galette. Follow these tips to make the best galette possible.
- 1. Mix and match fruits. Switch up your galette by incorporating complementary fruits. Blackberries pair well with other berries, like raspberries, blueberries, and strawberries, and stone fruits like peaches, plums, and nectarines.
- 2. Use frozen or fresh fruit. While fresh, in-season fruit is always the best choice for this unfussy dessert, you can also make a delicious galette by substituting an equal amount of frozen blackberries—no need to thaw.
- 3. Adjust the sugar. Adjust the sugar in the blackberry filling to suit your palate. Substitute sugar alternatives, like honey, pure maple syrup, agave nectar, or stevia, for sweetness if you want to go sugar-free.

Preheat the oven to 385 degrees Fahrenheit.

Combine the flour, salt, and sugar in a large bowl.

Add the cold cubed butter to the flour mixture. Work the butter into the dry ingredients with your fingers until the dough resembles coarse crumbs and there are no large pieces left (the dough should just hold together when pressed in a handful). Alternatively, use the pulse function on a food processor, taking care not to overwork the dough.

Turn the dough out onto a clean, floured surface, and add the cold water and vinegar. Comb through the dough with your fingers until everything is well-combined, then begin to knead the dough until it comes together, which should take about 2 minutes.
