You can make blackberry cobbler with fresh berries or frozen berries. Unlike other baked fruit desserts, like a pound cake or quick bread, the excess liquid from frozen blackberries won’t affect the final texture. The juices will thicken (thanks to a bit of cornstarch) as the topping bakes. If they’re in season, use fresh blackberries: The flavors will be brighter and bolder.     Combine the berries, sugar, lemon zest, lemon juice, and cornstarch in a medium bowl.

    In a large bowl, combine the dry ingredients.

    Whisk together the flour, cornmeal, sugar, baking powder, and salt.

    Add the cubed butter, and work it into the flour mixture with your hands until it resembles coarse bread crumbs.

    Whisk a ½ cup of buttermilk, egg, and vanilla together in a glass measuring cup or small bowl; add it to the flour and butter mixture and stir together with your hands or a rubber spatula, just until combined.
