What Is Black Bean Hummus?

Black bean “hummus” is a smooth, spicy bean dip in the style of traditional hummus, which is made with tahini and chickpeas. Black bean hummus is a gluten-free appetizer often served alongside crudités, pita chips, bread, and/or tortilla chips. Typically, black bean hummus contains garlic, japaleño peppers, tahini, lemon juice, spices, and black beans (instead of garbanzo beans like its Middle Eastern counterpart).

Black bean hummus is easy to whip up on short notice, but if you have the time, there are a few ways to refine the process:

  1. 1. Use fresh beans: Like homemade hummus, the best way to elevate a dip’s texture is to use fresh beans. The beans will need to soak overnight to soften, which helps them cook quicker. You can use a pressure cooker to speed up the cooking process.

    To make the roasted garlic, preheat the oven to 400°F. Slice off the very top of the bulb to expose the cloves within. Place the garlic on a square of aluminum foil, drizzle with olive oil, and wrap, then roast for 20 minutes. Remove the cloves from the oven, and let them cool. When they are cool enough to handle, remove the cloves (they should pop out easily) and set them aside.

    Combine garlic cloves, black beans, olive oil, cilantro stems, jalapeño, cumin, cayenne, and salt in a food processor. Blend until smooth, adding a little oil if the mixture appears too thick or dry. Taste and adjust the seasoning as needed, adding a bit more lime juice, heat, or salt to preference.

    Transfer the dip to a large bowl, and serve with accompaniments.
