- 1. Use ripe bananas. Use extremely ripe bananas to achieve an extra rich banana flavor. You can even use browned bananas, which will lend the ice cream lots of flavor. Avoid using unripe green bananas because they are not as sweet and affect the ice cream’s sugar content and taste.
