Bananas are a good substitute for butter in many baking or stovetop recipes because they are of a medium consistency when mashed and a good source of potassium, vitamin C, and calcium. - 1. Toppings: The toppings are sometimes just as important as the pancakes themselves. Maple syrup is a classic topping. You can also add fresh fruit, pecans, or other nuts, and even whipped cream can elevate a simple banana pancake recipe.
- 2. Recipe substitutions: You can customize the batter to accommodate any dietary or allergy restrictions. If you can’t eat dairy, you can substitute the main liquid (usually buttermilk or regular milk) with a dairy-free milk like almond milk or oat milk. Additionally, if you are gluten-intolerant, you can use gluten-free flour. Try to use a cup-for-cup replacement flour so you aren’t messing with the ratios and will still achieve the desired consistency.

Combine the flour, white sugar, baking powder, and salt (all the dry ingredients) in a large bowl. In a separate bowl, mix together the egg, milk, vegetable oil, vanilla extract, and bananas (all the wet ingredients).

Stir the dry ingredients into the wet ingredients—the batter should be lumpy.

Spray your pan of choice with your cooking spray, or place butter in the cold pan. The amount of butter you cook the pancakes in is up to you.

Heat a griddle, nonstick frying pan, or cast-iron pan over medium heat and add the butter or cooking spray to it. The pan is ready when the butter has melted and is starting to bubble or when the cooking spray puddles in the pan or appears to start to ripple.

Scoop ¼ cup of batter and pour it into your pan. Cook the batter in the oil or melted butter until you see bubbles forming around the outside of the pancake and it is golden brown. Once that happens, flip the pancake and cook it on the remaining side until it is golden brown.
