What Is Banana Blueberry Bread?
Banana blueberry bread (or blueberry banana bread) is a take on a classic banana bread recipe, a quick bread that uses mashed ripe bananas. Quick breads use baking powder and baking soda as leavening agents instead of yeast. In a blueberry banana bread recipe, the chemical leavening agents start working immediately after coming into contact with liquid, requiring zero proofing time, unlike with traditional yeasted bread. The texture of a quick bread is slightly crumbly, but it should hold its shape. The consistency is similar to blueberry muffins, another type of quick bread.
How to Store Banana Blueberry Bread
After you make blueberry banana bread, remove it from the loaf pan and let it cool to room temperature before wrapping it for storage. Wrap the bread tightly in plastic wrap or use a plastic resealable bag. Then store the bread at room temperature or in the refrigerator. To freeze blueberry banana bread, wrap the bread first in a layer of plastic wrap and then a layer of aluminum foil. You can slice the bread before freezing it or keep it as a whole loaf.

Preheat the oven to 350 degrees Fahrenheit.

Grease a 9-inch loaf pan with nonstick cooking spray.

Fold a sheet of parchment paper in half and place it in the loaf pan, leaving some hanging over the sides of the loaf pan.

Melt the butter and let it cool.

Add to a medium bowl the 1 cup of all-purpose flour, whole wheat flour, and salt, in addition to the leavening agents—the baking soda and baking powder—before whisking to combine all the dry ingredients.

Add to a small bowl the remaining 1 tablespoon of flour and the fresh blueberries, tossing the ingredients to coat all the berries. Covering the blueberries prevents the blueberries from sinking to the bottom of the bread. If you’re using chocolate chips, coat them in flour, too.

Add to a large bowl the bananas, and with a fork, potato masher, or electric mixer, mash them.

Whisk the brown sugar and eggs into the mashed bananas until the mixture is light and fluffy.

Whisk the sour cream and vanilla extract into the rest of the wet ingredients.

With a wooden spoon or rubber spatula, stir the dry ingredients into the wet ingredients.

Slowly fold in the melted butter and flour-coated blueberries.

Pour the batter into the prepared loaf pan.

Bake the batter for 50 minutes to 1 hour.

Insert a toothpick into the bread. If it comes out clean, pull the bread out of the oven.

Cool the bread in the pan for 10 minutes, then transfer the bread to a wire rack to cool completely.
