    Preheat the oven to 350°F.

    In a large pot or Dutch oven over medium-high heat, cook the bacon pieces until the fat has rendered and the edges are crispy. Remove the bacon pieces from the pan with a slotted spoon, then place it on a paper towel-lined plate.

    Lower the heat slightly and add the onion, jalapeño, and garlic to the bacon grease.

    Season with salt and pepper, and sauté until the onion begins to soften, about 5 minutes.

    Add the beans, sweetener, your sauce of choice, paprika, and vinegar to the pot. Season to taste.

    Remove the pot from the heat, and transfer the bean mixture to a casserole dish. Top it with reserved, cooked bacon pieces.

    Cover the dish with foil and bake until the sauce thickens and the beans are very tender, about 1 hour. Remove the foil, and bake for an additional 10 minutes, to crisp up the bacon.
