What Is an Asparagus Frittata?

An asparagus frittata (Italian for “fried”) is a baked egg dish similar to a quiche without the crust or a custardy omelet. Your asparagus frittata can be simple, incorporating few ingredients beyond asparagus and eggs, or it can serve as a base for more vegetables, such as artichoke hearts, shallots, zucchini, and other spring vegetables. You typically serve an asparagus frittata warm or at room temperature.

Asparagus frittatas can be relatively healthy depending on the ingredients you use. The most low-carb iteration features mainly asparagus and eggs. Swap in egg whites for whole eggs to lower the cholesterol content. Fresh asparagus can also help lower cholesterol; the veggie is low in carbohydrates while also being high in nutrients like vitamin A, vitamin C, calcium, potassium, and dietary fiber.

If fat content is of concern to you, steer clear of using fatty meats, such as prosciutto or bacon, and cheeses like parmesan cheese, ricotta, gruyere, or cheddar—these will all enhance the frittata’s taste but also increase the fat in the dish. Lower-fat options include lean bacon, such as turkey bacon, and feta or goat cheese.

Ingredients

    Preheat the oven to 425 degrees Fahrenheit or turn on your oven’s broiler.

    Add the olive oil to a nonstick frying pan or cast-iron skillet and saute the asparagus, chives, leeks, and green onions over medium-high heat for about 7–8 minutes.

    Whisk the eggs in a large bowl. Lower the stovetop flame to low-medium heat and add the eggs to the pan or skillet. Season with sea salt and black pepper. After 5 minutes, flip the frittata over and let it cook for another 5 minutes.

    Transfer the frittata to an ovenproof skillet if you aren’t already using one.

    Place the skillet into the oven to broil for about 7 minutes, until the top turns golden and just starts to crisp.

    Remove the skillet from the oven and let the frittata cool for 5 minutes before you cut it into slices.
