What Are Asparagus Fries?

Asparagus fries are fresh asparagus spears that you pre-cook, bread with a batter or breadcrumbs, and then either fry or bake until they become golden-brown and crispy. Eat asparagus fries as an appetizer, side dish, or substitute for potato French fries.

Asparagus itself is a nutritious food, but your cooking method and other ingredients you use impact the healthiness of the asparagus fries. Asparagus is low in calories, cholesterol, and carbohydrates, and is a good source of potassium, vitamin K, vitamin A, and vitamin C.

Deep-frying asparagus adds significant fat and calories, so oven-baked or air-fried asparagus fries can be somewhat healthier alternatives. Before baking asparagus fries in the oven, you can drizzle the breaded asparagus with olive oil or a cooking spray to achieve a crispiness similar to those of deep-fried asparagus fries.

3 Dipping Sauces to Serve With Asparagus Fries

Asparagus fries are delicious plain or with condiments. Here are three dipping sauces that pair well with asparagus fries:

  • Aioli: Aioli is an emulsion of egg yolks, a neutral oil (such as canola or vegetable), lemon juice, and dry or regular mustard. You can add other flavorings—like garlic, fresh herbs, or chipotle peppers—to the basic recipe. You can also mix savory ingredients with store-bought mayonnaise to make an aioli.
  • Ranch: Fried foods can be heavy, so a cool, herb-filled ranch dressing—a popular dipping sauce for many different foods—can lighten or brighten the flavor profile of asparagus fries.
  • Yogurt: Fried foods and creamy sauces pair well together, especially with the addition of spice or heat. To make a spicy yogurt, simply mix Greek yogurt with a hot sauce—for example, sriracha—until you achieve the desired level of spice.

Ingredients

    Preheat the oven to 375 degrees Fahrenheit.

    Boil the fresh asparagus spears in hot water for 5 minutes.

    Prepare the dredge station. Place the flour in a shallow dish. To the flour, add the garlic powder, kosher salt, and black pepper; stir to combine everything. Crack the eggs into a separate bowl and whisk them. Place the panko breadcrumbs in a separate shallow dish, add the parmesan to the panko, and stir to combine.

    Dry off the boiled asparagus.

    Line a baking sheet with parchment paper, then place a wire rack on the baking sheet.

    To start the dredging process, roll an asparagus spear in the seasoned flour mixture. Next, dip it into the egg mixture, covering it completely. Then roll the spear in the panko mixture to fully coat it before you place it on the baking sheet. (If you start to run low on the breadcrumb mixture, add more panko and Parmesan as needed.)

    Repeat with all the asparagus spears, making sure to arrange them in a single layer on the baking sheet.

    Drizzle the breaded asparagus with olive oil or coat them with cooking spray.

    Bake the spears until they’re golden-brown and crispy, about 25 minutes.

    Remove the asparagus fries from the oven and serve them hot, either plain or with a dipping sauce.
