What Is Artichoke Salad?
Artichoke salad is a type of Greek salad featuring marinated artichoke hearts and primarily Mediterranean ingredients, such as olive oil, cheese, and herbs. To make the side dish, you typically toss artichoke hearts (and sometimes pasta) with a dressing made of olive oil and vinegar.

You can use many ingredients to make artichoke heart salads, including:
- 1. Herbs: You can experiment with different herb combinations—like mint, parsley, or tarragon—as a garnish or in the dressing.
- 2. Salad dressing: Traditional artichoke salad uses an Italian dressing or vinaigrette with olive oil and white or red vinegar dressing. You can also try a dressing with balsamic vinegar, apple cider vinegar, or even a creamier base like ranch dressing.
- 3. Vegetables: Try mixing in different veggies, such as chickpeas, black olives, oranges, nuts, or grapefruit.
- 4. Pasta: Many artichoke salads use short pasta types, such as fusilli, farfalle, or rigatoni.

Bring a large pot of water to boil. Add the pasta when boiling and allow to cook for up to 10 minutes. Then, drain the pasta and set it aside.

In a small bowl, combine all of the ingredients for the dressing, including the white or red wine vinegar, dijon mustard, dried oregano, olive oil, garlic, lemon juice, salt, and pepper. Stir to combine.

Marinate the red onions in the dressing. Chop the red onion into slivers and add them to the dressing. Let the onions sit for at least 30 minutes.

Combine the salad ingredients. In a large bowl, add the chopped romaine lettuce, artichoke hearts, roasted red peppers, cherry or grape tomatoes, kalamata olives, and cucumber. Drain the pasta and add to the ingredients.

Pour the dressing mixture, including the red onions, over the salad ingredients. Stir and toss until combined.

Crumble feta cheese and parmesan cheese over the salad before adding the chopped basil leaves and capers to garnish. Add salt and pepper to taste.
