What Is Artichoke Hummus?
Artichoke hummus is a variation of the classic hummus dip. While often served at Greek and Mediterranean restaurants, the dish is actually less common in those regions. It hails from the Middle East, and is incredibly versatile, as it’s gluten-free, dairy-free, vegan, and filled with healthy fats. However, the chickpeas used in this artichoke hummus make it not paleo-friendly. This homemade hummus makes a great, healthy swap for the cheese-filled spinach artichoke dip often served at gatherings.
The snack is served as a dip or spread, alongside pita chips, bread, crackers, or veggies. Chefs prepare it with chickpeas (also known as garbanzo beans), olive oil, lemon, and garlic, plus other ingredients depending on the area where it’s prepared. Other variations can include white bean, tahini, roasted garlic, sun-dried tomato, crushed red pepper, olives, black pepper, or other spices either mixed in or as a garnish.

Add the artichoke hearts, chickpeas, garlic, olive oil, tahini, and lemon juice in a powerful blender or food processor. Blend until very smooth.

Open the food processor and scrape the sides. While carefully adding the cold water through the top, blend again until you reach your desired creaminess level.

Add salt to taste.

Move the mixture into a serving dish before drizzling with oil.
