What Is Artichoke Bruschetta?

Artichoke bruschetta combines the flavors of artichoke dip with French bread to create a cheesy, tangy appetizer. Bruschetta is a classic Italian appetizer that consists of grilled bread rubbed with garlic and finished with a drizzle of olive oil. In Italy, bruschetta refers to the grilled bread, but in other parts of the world, bruschetta refers to the topping—such as a savory artichoke spread—on the grilled bread. A relatively easy appetizer to make, artichoke bruschetta can be elegant finger food at a fancy party or a satisfying, casual snack at a potluck.

Artichokes are high in fiber, vitamin C, and vitamin K and low in fat, carbohydrates, and cholesterol. However, there can be many carbohydrates in the bread, depending on the particular kind of bread you use and your ratio of bruschetta topping to the crusty baguette slices. Fortunately, the customizable nature of artichoke bruschetta enables you to make the dish in a way that can suit different dietary needs.

    Preheat your oven’s broiler.

    In a medium bowl, combine the artichoke hearts, garlic cloves, parmesan cheese, red onion, diced tomato, and mayonnaise.

    Cut the baguette into ⅓-inch thick slices and brush the slices with olive oil. Place the bread slices on a baking sheet and toast them lightly under the broiler, about 2 minutes, before removing them. Leave the broiler on.

    Add equal amounts of the artichoke mixture to each lightly toasted baguette slice, spreading the mixture evenly over the entire surface of the bread, right up to the edges. (The edges may burn if they’re not covered with the artichoke mixture.)

    Ensure the slices are still arranged on the baking sheet in a single layer. Return the bread to the oven and broil again until the tops of the bruschetta are bubbling and golden brown, about 2 minutes. Remove the bruschetta from the oven and turn off your broiler.

    Sprinkle the chopped parsley over the slices to finish them.
