What Is Apple Crostata?
Crostata is the Italian version of a galette, the free-form, open-face French tart. More rustic than American apple pie, an apple crostata is easy to bake at home with a cookie sheet—no pie dish needed. Once you’ve mastered the technique, try adding nuts, topping with crumble, or substituting other types of fruit.

For the dough:

In a large bowl, whisk together flour and salt to make the pie crust.

Add cold unsalted butter, and work together using your fingers until the largest butter chunks are the size of peas. (Alternatively, pulse in a food processor.)

Sprinkle with half of the ice water and toss the mixture in your hands until it starts to come together into a very crumbly dough, adding a little more ice water if needed.

Form the dough into a disk and wrap with plastic wrap. Chill until firm yet workable, about 40 minutes.

Meanwhile, make flavored sugar. In a small bowl, combine granulated sugar with orange zest, cinnamon, and allspice.

Roll the dough out into a 14-inch circle and carefully transfer to a parchment paper-lined baking sheet.

Arrange apples in the center of the dough in concentric circles, leaving a 2-inch border of dough.

Fold the dough border over the apples.

Preheat the oven to 400 degrees Fahrenheit.

Brush the edges of the dough with melted butter.

Sprinkle any leftover butter over the apples, and sprinkle the flavored sugar over the dough border and apples.

Bake on the bottom rack until deep golden brown, about 50 minutes. Serve warm, or allow to cool to room temperature. Serve with vanilla ice cream.
