Apple cider muffins, or apple cider doughnut muffins, are tender, moist individual cakes made with apple cider and baked in a muffin pan. Warm-spiced apple cider adds a fall flavor to the muffins. Popular toppings for apple cider muffins include cinnamon-sugar streusel and apple cider glaze.

When baking apple cider muffins, consider the following tips:
- 1. Experiment with toppings. You can finish the muffins with a sprinkling of cinnamon sugar, crunchy streusel topping, or a drizzle of glaze made from powdered sugar and a splash of apple cider.
- 2. Make mini muffins. Use a mini muffin tin to make bite-sized muffins.
- 3. Go gluten-free. Make these muffins gluten-free by using a gluten-free all-purpose flour blend.

Preheat the oven to 350 degrees Fahrenheit.

Lightly grease the inside of a 12-cup muffin tin with baking spray and dust it liberally with sugar. (Pay special attention to the bottom of the pan to prevent any sticking.) Alternatively, line 12 muffin cups with paper liners.

In a large bowl, whisk together 2 cups flour, baking powder, baking soda, 1 teaspoon cinnamon, allspice, nutmeg, and ½ teaspoon salt.

In a mixing bowl, mix the oil, granulated sugar, brown sugar, apple cider, applesauce, and vanilla extract until smooth.

Add the eggs and whisk until fully incorporated.

Transfer the wet ingredients to the bowl of dry ingredients. Use a rubber spatula to fold the ingredients together, just until you’ve fully incorporated the flour mixture. Avoid overmixing.

Divide the cake batter evenly between the prepared muffin pan cups and smooth the tops with a spatula.

Make the streusel topping. In a small bowl, combine ⅓ cup flour, 2 tablespoons granulated sugar, 1 teaspoon cinnamon, and ¼ teaspoon salt. Add 2 tablespoons of cubed butter. Use your fingers to work the butter into the flour mixture until the mixture resembles coarse crumbs with some pea-sized pieces. Sprinkle the sugar topping evenly over the muffins.

Bake until the tops of the muffins are golden brown and a cake tester or toothpick inserted into its center comes out clean, about 20 minutes.

Allow the muffins to cool slightly in the pan, then transfer the muffins to a wire cooling rack. Serve warm or cool completely.

Store muffins in an airtight container at room temperature for 3–4 days.
