What Are Apple Cider Cookies?
Apple cider cookies are sugar cookies made with apple cider and warm apple pie spices. Like classic sugar cookies, apple cider cookies are tender, chewy, and sweet, but with the addition of apple flavor. Bakers typically finish the cookies with maple syrup and apple cider glaze. You can also sprinkle the cookies with cinnamon sugar before baking for additional flavor.

Preheat the oven to 350 degrees Fahrenheit with a rack in the center position. Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and kosher salt. Set aside.

In the bowl of a stand mixer fitted with a paddle attachment, combine room temperature butter, granulated sugar, and brown sugar. Beat on medium speed until light and fluffy, about 5 minutes. Alternatively, use a large mixing bowl and an electric mixer.

Add buttermilk and 3 tablespoons of apple cider. Blend until smooth, scraping down the sides of the bowl as needed.

Add the egg and vanilla extract and blend until combined and smooth.

Add half of the dry ingredients to the bowl of the stand mixer, mixing on slow speed until just combined. Add the remaining half of the dry ingredients and mix until just combined.

Using a small cookie scoop, add cookie dough balls to the prepared cookie sheet, about 1½-inches apart (about 18 cookies).

Bake the cookies until just lightly golden brown around the edges, about 10 minutes.

Cool cookies on the baking sheet for 5 minutes, then transfer to a cooling rack set over a cookie sheet or parchment paper.

In a small bowl, whisk together confectioners’ sugar, melted butter, maple syrup, and the remaining 1 tablespoon of apple cider until smooth.

Spread the glaze over cookies and cool completely before serving so the glaze can set, about 20 minutes.
