Blend the ingredients with any additional flavorings in a food processor or blender until they’re thick and creamy, then transfer it to a loaf pan to freeze.

    Place the almonds in a large bowl and cover them with 2 cups of water. Allow them to soak overnight, around 8 hours.

    In a small skillet over medium heat, render the coconut oil until melted, about 30 seconds. Remove the skillet from the heat and allow the oil to cool.

    Next, transfer the almonds and their soaking liquid to a food processor or high-speed blender. Add in the vanilla extract or seeds, sugar, and cinnamon and blend until the mixture is as smooth as possible. With the processor running, add the coconut oil and continue to blend until combined.

    Transfer the mixture to an ice cream maker, and churn according to the manufacturer’s instructions, allowing a little extra time to achieve a consistency like soft-serve, about 20 minutes.
